The industry experiences a lack of standardised training. Many individuals have experience, but there is no uniformity in that experience. For instance, Person A may have 5 years of experience as a bartender at a 5-star hotel, while Person B has 5 years of experience as a bartender in a rock bar. If both were on this programme, their level of knowledge could be easily identified through a grading system.
Employees enrolled in the programme begin their development journey with compliance training facilitated by CPL. Upon completion, they are awarded the 3-DeepGrad Grade 1 certification. After approximately a month of practical work experience, employees become eligible to progress to Grade 2. At Grade 3, course materials from the Institute of Hospitality are introduced. Subsequently, at Grade 4, City & Guilds technical qualifications are incorporated, which continue throughout the remainder of the programme.
Grades 1 to 5 encompass the fundamental knowledge that employees should possess about the industry. The complexity of the material increases in correlation with the employees' length of service.
Upon reaching Grade 5, employees are given the option to select their preferred career path: Bartender, Waiter, or Chef. The subsequent three grades are designed to cater specifically to each chosen path, encompassing comprehensive and relevant subject material.
In Grade 6, CPL and C&G continue, with the Class of '68 now on board as employees begin to prepare for management training. St. John's Ambulance will also participate at this stage. Grade 7 maintains this progression with materials introduced by WSET. This process continues up to Grade 10, where employees will engage in more substantial work and undergo the APLH process. To complete Grade 10, employees are required to produce a piece of work to 3-Deep, which will be evaluated by external parties.
Recruitment would be significantly streamlined as candidates could specify their qualifications, for instance, as being at a 3-DeepGrad Grade 4 level. This would also facilitate easier mobility for candidates, allowing them to transition seamlessly between various 3-DeepOS venues. Venues could more accurately target the specific qualifications they seek in potential employees, such as Leeds Pub Co seeking a 3-DeepGrad Grade 5 bartender or a 3-DeepGrad Grade 2. Implementing a uniform programme across all venues enables candidates to continue their professional development without interruption, with their records being updated accordingly. It is important to note that the 3-DeepGrad programme grades are applicable only to venues utilizing the same programme.
From a candidate's perspective, when beginning work at a new venue, individuals are often required to complete online training. However, the records of such training are frequently not maintained, consistent, or transferred, resulting in frustration as candidates must start over, wasting both time and resources. Implementing a unified system for training would greatly simplify this process.
